Terroir: The vineyard is located at the bottom of a plot in the place called Mittlerer Eich, called Am Rein, in the heart of the Grand Cru Eichberg. The vines are in direct contact with the marl-sandstone parent rock which is exposed
Winemaking: Manual harvest. Harvested at optimal maturity, the dried grapes are partially destemmed and then put into vats for 2 to 3 weeks depending on the vintage. Punching down and pumping over are carried out once or twice a day to gently extract the tannins and colour. De-vatting takes place at the precise moment when the tannins are abundant but remain fine, without rusticity. The wine is then transferred into French oak barrels (Allier and Vosges origin) for 12 months of ageing. No fining and only light filtration before bottling

About the Winery:
Domaine Paul Ginglinger is a family-owned estate located in Eguisheim, a fairytale village just south of Colmar with a long winemaking history. The village is dominated by two grand cru vineyards, Eichberg and Pfersigberg.
Founded in 1610, it is now in the hands of Michel Ginglinger, who represents the 13th generation of the family. The domaine covers 12 ha of vineyards planted to pinot noir, pinot blanc, gewürztraminer, riesling, pinot gris, muscat and sylvaner. The average vine age is 30 years.
The production is certified organic. Michel uses no chemical pesticides or mineral fertilisers, preferring to allow the plants to find their own equilibrium. The result is concentrated, balanced wines with great purity and terroir character from village wines up to the Grands Crus.
