Ageing: Handpicked, the grapes are transported to the cellar in 15 kg crates before being sorted by hand so as to solely use perfectly ripened and healthy grapes. 100% de-stemmed, the grapes are then transformed into wine using the harvest’s natural yeast

Palate: Notes of cherries, cinnamon over a firm tannic structure in its youth. Gains complexity as it ages
About the Winery:
Domaine Decelle & Fils was started in 2008 when two distinguished winemakers from other regions of France decided to pool their talents and produce high-quality Burgundy wines. Olivier Decelle is the vigneron behind Mas Amiel in Roussillon, and he also revived Château Jean Faure in Saint-Émilion. Pierre-Jean Villa was part of a boutique Rhône negociant, and he is also a Rhone Valley vigneron. They purchased and restored a historic 19th-century cellar in Nuits-Saint-Georges along with about 20 acres of vineyards in various Burgundy locations.
Increasing the Domaine’s vineyard holdings and organic conversion has been key to progress here. 85% of the wines now come from the Domaine`s own vineyards, which cover 8 hectares, mainly in the northern Côte de Beaune. The aim here is to avoid masking fruitiness with new oak aromas while renewing their barrel stocks over 3 – 4 years. Wines are let to run by gravity into the barrels, keeping to a maximum of 50% new oak. Picking is done by hand, and only native yeasts are used.
