Black Elephant Vintners Two Dogs a Peacock and a Horse Sauvignon Blanc 2024

Type: White
Country: South Africa
Region: Franschoek Valley
Grape Variety: 100% Sauvignon Blanc

Climate: Warm continental climate
Winemaking: Each vineyard is harvested and vinified separately to ensure maximum complexity. All our fruit are hand-picked in the early morning and handled reductively to preserve the integrity of the fruit. After destemming a period of skin contact is allowed according to chemical analysis, phenolic and flavour ripeness. A light pressing is followed by 3days of cold settling to clarify the juice. A maximum of 600l/ton is recovered at this stage. Each vineyard is inoculated with selected yeast to match its flavour profile. Fermentation lasts for 21-30 days at 13-16°C. 2 Months of full lees contact, with regular stirring, is allowed post-fermentation to add richness and texture to the wine. The components are then blended and stabilized prior to bottling. Matured for 2 months on its primary lees with batonage weekly

Color: Translucent with a bright green hue
Nose: The nose is opulent and bursts with a cocktail of fruits, showing aromas of peach, passionfruit, pear, and litchi
Palate: The palate is lively and concentrated with flavours of melon, tropical fruits, gooseberry, and creamy richness from the extended lees contact and lingers with vibrant acidity and minerality
