Climate: A Mediterranean climate with moderate summers and sufficient precipitation
Terroir: Mono Guyot, 41 year old vines
Ageing: Pinot Grigio and Sauvignon Blanc – 1 day of maceration. Ribolla – 5 days of maceration. The wines are then put into separate barriques at the end of their fermentation. After the ageing process, the final wine is then blended. Aged for 18 months in barrique barrels (225L)
Color: Clear, golden-yellow color with an oily texture
Nose: Its bouquet is accentuated, and sophisticated. We detect ripe yellow apples, dried persimmon slices, and gooseberries. Eventually, scents of bergamot, lemon, dried flowers and marzipan appear. The finish reveals vanilla, cinnamon, a gentle note of cedar, dry autumn leaves, tea tree and Mediterranean herbs
Palate: The taste is soft and noticeably warm. Its freshness is youthful and refreshes our palate with its mineral salinity, and slight perceptions of tannin in the finish. The taste is intense, the wine is elegant, full-bodied and long-lasting, pampering us with a spectrum of ripe fruit and Mediterranean herbs
