Terroir: Cabernet Sauvignon fruit from the foothills of the Andes and the middle reaches of the Rapel Valley, grown on hillsides overlooking the river Cachapoal. Stony soils, clear skies and cool night grow concentrated fruit with excellent tannins
Ageing: Upon arrival at the winery all grapes were destemmed and crushed to stainless steel tanks and inoculated with selected yeasts. Fermentation occurred quickly and temperatures were kept low, at around 25ºC. The wine was left to macerate for an additional 8 days, for added structure and longevity. Half the resulting wine underwent malolactic fermentation in barrels, where it was left to age for an average time of 6 months, the other half was kept in tanks. The wine was finally blended, filtered and bottled.

Nose: Aromas reminiscent of black cherries, raspberries, mint and tobacco are complemented with notes of vanilla and mocha from the French oak barrels the wine was aged in
Palate: This Cabernet Sauvignon is lively and fresh, with supple tannins and excellent length
About the Winery:
Casas del Bosque is located 70 km from Santiago, the capital of Chile, and 30 km from one of the principal ports of Chile, Valparaiso. It was established in 1993 to be a family boutique winery exclusively oriented to the production of high quality wines. Casas del Bosque has its own vineyards in the Casablanca Valley with 235 hectares planted, exclusively dedicated to the production of cool-climate varieties such as Sauvignon Blanc, Chardonnay, Riesling, Pinot Noir and Syrah. Cabernet Sauvignon and Carménère come from the Maipo, Colchagua and Chachapoal valleys.
One of Casas del Bosque’s biggest strengths is its soil. In the hills, red clay composites of volcanic origin sit on top of decomposed granite layers formed 110 million years ago beneath the Pacific Ocean. This soil gives our wines the unique characteristic sea salt flavor.
The winery has been awarded the prestigious award of “Best Chilean Wine Producer” for 2 consecutive years (2013 and 2014) at the International Wine & Spirits Competition in London, a well-deserved testament to our commitment to producing quality wine.
