Terroir: On a production trip in the summer of 2020, Kolonne Null’s contact with Anette Closheim came about through the recommendation of the hosts during a repeated stay in the Quartier Linde. A vintner who produces modern premium wines from the Nahe region in her family’s 150-year-old vineyard, which are characterized by their purist taste and aesthetics. In the heart of a picturesque row of houses, they tasted each other’s wines in the in-house vinotheque and realised: it’s a match! Closheim supplies sommeliers of top chefs, was the first winemaker to win the Wine World award “Riesling Discovery of the Year” and is part of the Kolonne Null collection with a first co-produced Riesling 2020.
Ageing: De-alcoholisation by vacuum distillation to gently remove the alcohol down to a maximum of 0.3%. The thermal vacuum has the advantage of allowing the alcohol to escape at a low temperature of 30°C. This method allows the structure of the original wine to be kept intact while delicately separating the alcohol. The process is immediately followed by aroma recovery which captures the natural aromas from the wine. This preserves the diverse character and overall style of each individual wine. No artificial flavours or colouring are used
