Sustainable Farming

The project started in 2010 with the two winemakers of Comando G. – Fernando Garcia and David Landi joining efforts to develop wines from old vines of Garnacha from the Gredos Mountain. Vines were selected from four different vineyards in three villages, with an age of between 50 to 90 years old. They are located on the west side of Madrid in Cadalso de los Vidrios, Cenicientos and Rozas de Puerto Real. 

Viticulture here is completely biodynamic, in full respect of the environment. Vines grow on granitic soil at an altitude of 1000 metres. The climate around this sub-region is harsh, giving a balanced maturation of the grapes which then produces fresh and elegant wines. 

The grapes are hand-harvested at the perfect moment of ripeness. They are destemmed and maceration lasts an average of 30 days at low temperature. Fermentation occurs at controlled temperature in oak barrels and wooden vats. Subsequent ageing, which lasts for 10 months, then takes place in French oak barrels of a capacity of 400 and 700 litres. The result is a true reflection of the Garnachas grown in the Gredos Mountain.
